Eden Leshnick, baking manger at Breads Bakery in NYC, will show us how he makes the loaf that has been cited in New York Magazine and many other polls as the best version of Chocolate Babka anywhere.
Edan began his culinary career at various bakeries in New York. He then moved to Israel to enroll in Estella's esteemed pastry program before returning to New York, where he began working at Breads Bakery.
His dedication, relentless work ethic, and eagerness to learn quickly qualified him to be the inaugural night shift manager who oversaw all dough production. Edan recognized that a perfect dough is the fundamental building block to any superior pastry. He focused on perfecting his mixing and laminating techniques, being able to meet our shops' rising demand while maintaining a high standard of quality.
After a year of establishing a strong and reliable overnight team, Edan was ready for his next challenge as the Head Pastry Chef, where he could contribute to the bakery’s decision-making process on a larger scale. In addition to being a tireless self-learner with a genuine passion for mastering new techniques, Edan is a confident manager who leads by example everyday. The proof of this can be seen in his Pastry Department -- a consistent, tight-knit group of eager young pastry cooks that we are proud to call our co-workers.
